Nancy's Chicken in Puff Pastry

"Chicken breasts with herbed cream cheese, wrapped in puff pastry and baked. Very easy and delicious dish, it's good for company!"

 Ingredients:

1 tablespoon vegetable oil salt and pepper to taste 4

 (4 ounce) skinless, boneless chicken breast halves

1 (8 ounce) package cream cheese with chives

4 puff pastry shells

Directions: 1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.

2. Heat vegetable oil in a large skillet over medium heat. Sprinkle chicken breasts with salt and pepper, and place in hot oil; cook for 5 minutes, turning to brown evenly. Remove skillet from heat.

3. Roll out pastry shells as thinly as possible so that it is big enough to fit around a chicken breast. Spread 2 ounces of cream cheese on one chicken breast, place in the center of a pastry sheet; fold the pastry around the chicken, and pinch the pastry edges together very tightly to seal. Repeat with remaining ingredients. Place the pastry-wrapped chicken breasts on a greased baking sheet.

4. Bake for 12 to 15 minutes, until golden brown.


 
Chicago-Style-Pan Pizza


"This is the best Chicago-style pizza that I have ever had. Make sure that you use the Parmesan in hard triangle form. It tastes so much better when you grate it yourself."

Ingredients:

1 (1 pound) loaf frozen bread dough, thawed

1 pound bulk Italian sausage

2 cups shredded mozzarella cheese

8 ounces sliced fresh mushrooms

1 small onion, chopped

2 teaspoons olive oil


1 (28 ounce) can diced tomatoes, drained

3/4 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon fennel seed

1/4 teaspoon garlic powder

1/2 cup freshly grated Parmesan cheese


Directions:

1.

Preheat the oven to 350 degrees F (175 degrees C). Press the dough into the bottom and up the sides of a greased 9x13 inch baking dish.

2.

Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.

3.

Add mushrooms and onion to the skillet; cook and stir until the onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder. Spoon over the mozzarella cheese. Sprinkle Parmesan cheese over the top.

4.

Bake for 25 to 35 minutes in the preheated oven, or until crust is golden brown

 

 



Frog Cupcakes

"These frog faced cupcakes are fun and easy to make for a child's birthday."

Ingredients:

1 (18.25 ounce) package white cake mix

1 (16 ounce) can prepared vanilla frosting

6 drops green food coloring, or as needed

1/4 cup green decorator sugar


12 large marshmallows

48 semisweet chocolate chips

1 drop red food coloring


Directions:

1.

Bake cupcakes according to the directions on the package. Allow them to cool completely.

2.

Scoop 2/3 of the frosting into a small bowl and mix with green food coloring. Frost the cupcakes. Sprinkle some of the green sugar over the tops.

3.

Cut the marshmallows in half to make two circles. Dip half of each marshmallow piece into water and dip into the green sugar to make the eyelids. The remaining white will be the eyes. Place on the cupcakes. Use a little bit of white icing to glue a chocolate chip into the center of each eye for the pupil.

4.

Mix the remaining frosting with red food coloring to make pink. Use the pink icing to draw smiling mouths and nostrils or even tongues on the frogs.

 

Irish Potato Candy

 

1/4 cup butter, softened

1/2 (8 ounce) package cream cheese

1 teaspoon vanilla extract


4 cups confectioners' sugar

2 1/2 cups flaked coconut

1 tablespoon ground cinnamon


Directions:

1.

In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

Tex Mex Mac & Cheese

The Kids will be asking for 2nds on this one!

 

1 box of Shells and Cheese (Creamy Kind)

1 lb of ground beef

1 14.5 oz of Diced Tomatoes

1 4oz can of Diced Chiles

1 packet of Taco Seasoning

 

Directions:

1. Cook ground
beef in skillet until no longer pink.

2. Cook Shells according to directions on box- (just cook pasta, don't add cheese packet yet)

3. Meanwhile add the cans of tomatoes and chile peppers, and taco seasoning to the ground beef.

4. After shells are done cooking, add to the skillet, then put in cheese packet and stir until cheese is well mixed. Serve.
